What are white spruce shoots?

L'épinette blanche, also called Canada spruce or white spruce, is a conifer found in quantity in our Canadian forests. Its young shoots are full of distinctive flavour and aroma, characteristic of the boreal forest.

How do you use white spruce shoots?

White spruce shoots lend themselves to all sorts of cooking. Stir them into sauces and marinades for a woody note, or use them to scent white meat and fish. You can even grind them to a powder to give homemade bread a flavour of its own.

Infuse them hot for something comforting, or cold for something refreshing. Excellent with a slice of lemon and a little honey.
