What is the linden flower?
American basswood is a common tree in Québec, including in cities — in parks and even along pavements. You have almost certainly walked past one. Its small yellow flowers are strongly scented and open in late June, so in early summer you can catch their sweet perfume on a walk.
How do you use linden flowers?
The flower is often used in herbal teas and infusions, but it can also add a subtle sweetness to desserts and savoury dishes.
You can grind them to a powder with a pestle and mortar, then scatter them through dishes as you like.
For example, here is a recipe for baked apples with maple syrup (click here for the recipe). Some also use it when making redcurrant jelly.
