What are black spruce shoots?

Black spruce is a well-known tree scattered through Québec's forests, particularly in the north-east. It is one of the species that defines the boreal forest.

Hand-picked when they are richest in flavour and benefit, the shoots give off a resinous, lemony aroma that carries the freshness of the northern expanse.

How do you use black spruce shoots?

The young shoots are excellent infused, and for scenting hot drinks generally. They are often used in sauces and marinades, and to add flavour to meat and fish. Some also grind them to a powder to work into bread dough.
