Les Tassés came out of a simple conviction: an exceptional coffee should never be judged on its appearance alone.

In specialty coffee, every harvest goes through extremely rigorous sorting to produce perfectly uniform lots. At that stage some beans are set aside because of slight differences in size, shape or calibration. Yet those beans come from the same trees, the same harvest, the same varieties, the same terroir and the same processing as the most prestigious coffees. Their aromatic potential is entirely real.

We have worked for several years with Wilton Benitez, one of Colombia's most innovative producers and a global reference in controlled fermentation and post-harvest innovation. One question kept coming back in our conversations: why set aside beans with so much to offer, simply because they do not perfectly meet the market's visual standards?

That shared question is where Les Tassés came from.

Together we chose to give these beans their value back and a place in the cup, rather than watch them lose it. It is an approach that better honours the work done at the farm, reduces food waste, and offers a more responsible way of doing specialty coffee.

Behind their sometimes unusual appearance is a rich, generous, balanced coffee with ample notes of exotic fruit, milk chocolate and vanilla. Roasted with the same precision as all our coffees, Les Tassés is true to Wilton Benitez's craft and to 94 Celcius's quality standards.

Because in the end, the beauty of a coffee shows in the cup long before it shows in the bean.
