What is larch?

Tamarack larch is the only conifer in Québec that drops its needles in autumn. Rich in vitamin C, its small soft needles are well liked in tea. Its young shoots were once eaten as emergency food in the forest.

How do you use larch?

Add it to an infusion for a bracing forest note. It works well with other northern plants such as balsam fir or wild mint. In cooking, the needles can flavour broths, marinades or desserts. Traditionally, larch was also used in poultices or steam baths to soothe the skin and clear the airways.

Son milieu naturel

It grows as far as the far north of Canada, adapting well to different terrain and soils as long as it stands in full sun. In good conditions it grows very fast and reaches maturity at around twenty years — spruce and fir take some sixty.
