In San Adolfo, in Colombia's Huila region, Brayan Alvear is part of a new generation of producers pushing the limits of specialty coffee while staying deeply rooted in their own place.
Introduced to coffee at thirteen by his father, Brayan grew up to the rhythm of the harvests and the seasons. That passion, passed down through generations, led him to build a collective project now bringing together more than 60 local producers. Together they add value to their coffee by securing better terms for their harvests and taking part in innovative processing projects.
Through the collaboration between the producers, the Ancla processing station and the Clearpath Coffee team, this lot goes through a carefully controlled strawberry co-fermentation. The aim is not to mask the coffee but to explore new aromatic dimensions while preserving its structure and identity.
In the cup the result is spectacular. An explosion of ripe strawberry opens the tasting before giving way to notes recalling white chocolate, pastry cream and fruit candy. The texture is full, velvety and particularly rich, closer to a refined dessert than to a conventional coffee.
The process
The cherries first go through a controlled 24-hour pre-fermentation, then a second aerobic fermentation phase. After pulping, the coffee is placed in an anaerobic environment where natural aromatic compounds from dehydrated strawberry are added. Carried out with great precision, this stage develops a remarkable aromatic intensity while keeping the coffee in balance.
Drying and stabilisation are then done slowly, to preserve the complexity of the profile and keep quality consistent in the cup.
The result is a Colombian specialty coffee that is singular, vibrant and unapologetic, showing everything the new fermentation approaches developed in Huila can do.
