Highbush cranberry is a large shrub growing wild in Québec, bearing small tart red berries. This native shrub gives clusters of scarlet fruit that often hold on until the first snow, standing out against the winter.

How do you use highbush cranberry?

We love it as a hot infusion for a vitamin lift, or iced as something genuinely thirst-quenching. In cooking, once rehydrated, the berries make superb jellies and go beautifully with game. For the more adventurous, they add a striking boreal note to cocktails and mocktails.
