What is dune pepper?
Dune pepper, which comes from alder, is a forest ingredient found widely across northern Québec. This shrub, which can reach three metres, produces catkins in place of flowers, and those are what is harvested for fine cooking. They can be eaten freshly picked or dried; they are usually sold dried and whole.
Where do you use dune pepper?
The answer is simple: everywhere.

Son milieu naturel
Dune pepper is found across eastern North America, mostly in Canada. It likes damp, nutrient-poor ground — rocky sites, sandy areas, level terrain and mountains. The shrub also does well near marshes, streams, lakes and rivers. It can be harvested through the winter months, though late autumn is recommended, when the flavour is at its peak.
